How to prepare artichokes and make mediterranean marinated artichoke hearts

Have you ever felt apprehensive about cooking with artichokes because you don't know how to clean and prepare them? Have you ever wondered which parts of an artichoke are edible and which parts are not? Do artichokes feel like an intimidating vegetable? And finally, do you wonder how to make marinated artichoke hearts like the ones you find on antipasto bars or jarred in the grocery store?

In this video I will show you how to prepare small artichokes, and how to remove the dangerous and unappetizing portion. Preparing artichokes seems like a lot of work (okay, it definitely is a lot of work) but it is totally worth it because marinated artichoke hearts are insanely delicious.

Important takeaways for cleaning artichokes:
- Remove the prickly pointy parts and the woody-feeling outer leaves
- Always remove the purple flower inside, if there is one (in my batch I only had one artichoke with a purple flower). The purple flower can be very unpleasant and even dangerous to eat
- Trim off the wooden parts of the stem
- Cut the artichokes in half to determine if there is a flower
