Think you can't cook Indian food? This Chicken Dopiaza recipe will make you think again.

RECIPE
For the marinade

½ Cup of yoghurt
½ Tsp red chilli
½ Tsp turmeric
2 Tsp Coriander & Cumin mix (or 1tsp of each)
2 Chicken breasts cut into cubes

Base gravy

2 Tbsp oil
1 Sliced onion
1 Black cardamom pod
1 Cinnamon stick
2 Cloves
4 Black peppercorns
1 Tsp each of chopped garlic and ginger
3 Chopped tomatoes
½ Cup of water
½ Chopped onion
½ Tsp garam masala
½ Tsp salt

Marinade

1 - Mix all the ingredients in a bowl leaving the chicken last. Cover and let sit for at least 30 minutes.

Base gravy

1 - In a pan, heat up the oil and fry off the onions briefly before adding the cardamon, cinnamon, cloves and peppercorns. Saute together until the onions soften.

2 - Stir in the chopped garlic and ginger before adding the chopped tomatoes, cooking until soft and stirring regularly.

3 - Add the marinated chicken with ½ a cup of water, making sure to mix well here. Let the chicken cook for about 3-4 minutes before mixing in the chopped onion, garam masala and salt.

4 - Simmer until the chicken is cooked through, check by cutting into a larger piece and seeing if the middle is cooked and the juices have run clear.
