Hotel Nayaab Old City Hyderabad, Restaurants Of Old City Hyderabad, Muslim-Style Hyderabadi Cuisine

In this episode of Gourmet On The road we set out in search for some delicious Hyderabadi fare. This culinary conquest led us to the Old City, an area that boasts of some of the most iconic, traditional Hyderabadi eateries.

Hotel Nayaab, an establishment over three decades old, located right at the entrance of bustling Chatta Bazaar, Nayapul Road, Charminar, is a favourite amongst locals and tourists. Food Lovers’ Editor, Kripal Amanna catches up with Omer Aziz of Hotel Nayaab to understand the typical Hyderabadi fare served here. He explains how the Nihari, a broth that makes for the Paya Soup is slowly simmered over hours and also steps into the kitchen to discover the making of two extremely popular dishes.

this is a comforting dish perfect to be enjoyed on a nippy evening! you taste the nourishing goodness of the juices from meat bones and the warm spices. the thin veil of fat on top rounds off all flavours. the deep savouriness of fried onion and the fresh hit of coriander adds another layer to the nihari.

MALAI PAYA/ PAYA MASALA
definitely an indulgent take on the austere paya! the gravy is enriched with thick cream. the trotter itself is melt-in-the-mouth. Perhaps not for the purist.

BHEJA MASALA
this bheja preparation is as light as air! it melts away leaving behind the delicious, custardy flavour of the brain. the masala is unctuous, smoky yet delicate in flavour.

BHEJA PEPPER FRY
the gentle heat of the pepper creeps up the back of your throat. the bheja is cooked beautifully and the masala, heavy on pepper and coriander balances against the intense creamy bite of the brain..

MUTTON TALAHUA
the masala is reminiscent of an achari masala with its tart edge. it’s perfect to mop up with a piece of roti. the boneless mutton chunks are well cooked and have absorbed that masala.

DAL FRY
this nourishing lentil curry is thick and rich. it is more of a south indian style dal that is slightly tart, tempered with curry leaves and mustard.

MUTTON BIRYANI
every grain of rice is separate and has absorbed the flavour of the meat. the meat itself has its flavour and a bit of its bite intact. one can also taste the robustness of the spices that have gone into this biryani. the salan has a mild pickling flavour note that helps break the rich spice notes of the biryani.

QUBANI KA MEETHA
this dessert is a tad syrupy. the malai with its richness helps balance out the overwhelming sweetness. the nuttiness from the apricot kernels pack twice the flavour of almonds and breaks the monotony of flavours.
