This is the closest Jollibee fried chicken copycat base on my multiple trials. Hope you enjoy this recipe!

Brine ratio:

1 liter water
1-2 tbsp salt
1/2 cup vinegar or
2 tbsp baking soda

(Fridge/Chiller for 1-8 hrs @1-4°celslcius temperature)

after brining, Rinse(banlawan) your chickens 3-5x in cold water.
Then drain...

Marination: (2.5-3kg of chicken)
1 tbsp Garlic powder
1 tbsp onion powder
3/4 tbsp Paprika
1/2 tsp chili powder
1 tbsp Black pepper
1/2-1  tbsp Salt(do your own preference)

There are different ratios on flour and coatings. check the video on how I execute different methods and techniques. pwede kayong mag experiment ng flour/cornstarch ratio nyo.

CHICKEN COATING RATIO
(#1 #2 #3) recipe.

1 cup flour
1 cup cornstarch
1 tbsp Salt or 2-3 tbsp patis
1.5 tbsp onion powder
1.5 tbsp Garlic powder
1 tbsp Paprika
1 tbsp Black pepper
1 tsp chili powder


(optional 5-10% vinegar, tuba or any citrus fruit like kalamansi,orange lemon)

pwde din mag add ng 5% baking powder for extra crispy sa dry coating or mix Mona sa marination.


CHICKEN COATING #4

Plain All purpose flour + water(wet)

Plain Cornstarch (dry)

TIPS AND GUIDE:

-Pwede pong adjust niyo Yung spice powder depends sa taste preference niyo. bawas or dagdag ay ok lang. some spice powder ay nagdadarken ng outer coating, so better watch that out. specialty Ang paprika,garlic,onion,salt..nagpapadarken ng outer coating at mantika niyo.


-Every Flour and starch have different outcomes. so try to experiment in flour ratios. from 50/50, 60/40, 70/30 ng All purpose flour,tapioca,potato,cornstarch maraming klase ng flour at starch.

-if you used proper amount of salt sa marination. eh magbawas kana salt sa coating. vice versa nmn pag maraming salt sa coating eh magbawas ka salt sa marination.
