Protein Rich - Stuffed Banana Peppers

Banana Peppers are very mild in spicy-ness and has a tangy taste.  This can be eaten raw, but comes out very well stuffed.  Chickpea is very high in protein and so is peanuts.  I have combined both in this recipe with generous amount of garlic.  
8 Banana Pepper washed and dried
1/4 cup raw peanuts
1/2 cup chickpea flour
3 garlic cloves, chopped
1 tsp oil
Salt to taste
Slit the peppers length wise and de-seed.  These peppers have very little seed so it's easy.  Set aside
Stuffing:
Dry roast raw peanuts.  I used microwave to roast.  total of 90 seconds in 30 sec interval.  Coarsely crush peanuts and garlic. Heat oil in a pan, add chickpea flour.  Give it a mix.  Add the peanuts.  Season with salt.  Turn heat to low and stir until the mixture turns golden brown.  Chickpea flour also gives out a nice aroma when it's roasted.  Set aside to cool.  
Add about a tbsp of water and mix it so that the stuffing will bind well.  
Stuff the peppers and pan fry. Turn it gently all around and make sure it's cooked to golden brown.
Server hot with your favorite dip.
