Rum Baba | Carriageworks Winter Night Festival

This years Winter Night Markets is celebrating all things WILD. Honouring locally sourced ingredients that are seasonal and ethically sourced, producers and restauranteurs have been asked to use the entire ingredient.

We're making a rum baba cake soaked in BRIX distillers rum syrup, served with caramelised and poached apples, Messina jersey buttermilk gelato and vanilla chantilly cream.
