This is a recipe from my first cookbook "Wrapping It Up!" and it's a favorite here. Soft and pliable these tasty tortillas (wrappers) are great for toasting, wrapping, dipping, tacoing or anything else!
Basic Corn and Wheat Wrappers
(c) 2001 Vickilynn Haycraft
Wrapping It Up!
Makes 8-10 eight-inch tortillas
1 cup warm water
3 Tablespoons extra virgin olive oil
1/4- 1/2 teaspoon salt
1 cup fine corn meal (freshly-ground preferred)
1 or more cups whole grain flour of choice to make a moist, supple dough
Optional: 1-2 Tablespoons honey or natural sweetener of choice
