I saw a version of this on ‪@justine_snacks‬ and had to try myself.

INGREDIENTS

10 oz manchego cheese, cubed
1 cup extra virgin olive oil
2 sprigs fresh thyme
3 sprigs fresh rosemary
1 garlic clove
4 strips orange zest
1 tsp chili flakes
Flakey salt
Black pepper

INSTRUCTIONS

1. Put manchego cubes in a sealable container.
2. Heat the olive oil until shimmery over medium heat. Add the thyme, rosemary, chili flakes, garlic, and orange zest. Cook for 2-3 minutes. Then remove from heat and let the oil cool to room temperature.

3. Pour the oil mixture over the cheese, give it a stir, and let marinate at least 8 hours and up to 3 days (always in the refrigerator). Then bring to room temp when ready to serve.

4. Plate marinated cheese, top with salt and pepper, drizzle some of the olive oil mixture, and enjoy by itself or on a slice of bread!
