Dandelion greens are nutritious and full of flavor. Onion, garlic, and seasonings flavor these easily cooked dandelion greens #ClaudettesKitchen

Ingredients:
- 2 bunches of Dandelions wash it well then chopped
- 2.5 Liters of water on high heat to boils
- When boil turn on low heat and add the chopped chicory or dandelion
- Cook the chicory or dandelion until their color change from green to yellow green
- Once color become darker, turn off the heat and remove the dandelion
- Put the dandelion in the colander to filter the water
- Let it to cool down, then throw the water
- Once it cool down press the dandelion to extract the excess water from it
- Once you have removed the water from the dandelion, place it in a glass bowl
- 1 cup cooking oil
- Chop 4 onions to wings
- 10 cloves of garlic minced
- 1 teaspoon salt

How do you get the bitterness out of dandelion greens?
You can add the greens to a white bean salad, stew or even soup for that extra flavor and nutrition. Just a nice citrusy vinaigrette will do the trick to balance the bitterness of a raw dandelion greens salad. Eating them raw may be an acquired taste, so don't be disappointed if you do not like them prepared this way.

Can you dehydrate dandelions?
Also, you might want to know that Dandelion greens dry beautifully. You can dry them in the dehydrator all season long. Once you have a lot of dried leaves, gently crush them into small bits and add them to herb tea mixes, sprinkle into soups and stews, and shake directly onto salads.

How do I prepare dandelion root for consumption?
The dandelion roots should be browned and dried completely through. Cool completely. Grind and use as you would regular coffee, or place 1 heaping teaspoon of ground root in a cup of water, steep for 10 minutes and strain. Store in an airtight glass jar and grind just before use for best flavor

How do you get the bitterness out of chicory?
If that's too much for you, blanch first. Also, adding sweet or caramelly notes (a generous pinch to a spoonful of sugar in the frying pan) or aceto balsamico can mitigate the bitter taste.

Whole chicory root can be boiled and eaten as a vegetable, whereas ground chicory is often brewed with water to make a coffee-like drink. As a rich source of inulin, it can likewise be found in packaged foods and supplements.

A clinical trial conducted by the Rheumatic Diseases Division at the University of Texas Southwestern Medical Center's Department of Internal Medicine suggests that the extracts of chicory root have anti-inflammatory properties that may help with arthritic symptoms, particularly degenerative joint disease
