Mrs. Bell's Sweet Potato Pie
Preheat oven 375 degrees Fahrenheit
Baking Sheet lined with foil OR parchment paper
One 9 inch deep-dish frozen pie crust
Stand alone OR hand beater
Ingredients:
2 lbs (approximately 2 large sweet potatoes)
2 large eggs (room temp)
½ cup brown sugar
¼ cup granulated sugar
½ stick melted butter
½ cup evaporated milk
¼ to ½ cup whole (2% or A2 milk)
1 Tablespoonful vanilla
1/8 teaspoonful rum flavoring (optional)
2 teaspoonfuls pumpkin spice (pumpkin spice 1 teaspoonful cinnamon, ½ teaspoonful nutmeg,
and pinch of ginger*)
¼ teaspoonful salt
½ teaspoonful lemon zest (*optional)
Instructions:
Rinse the sweet potatoes and pat dry with a paper towel, then place the potatoes on a lined
cooking sheet and bake on 350 degrees for about 1 hour and 15 minutes (depending on oven)
Remove from the oven and set aside to cool
Once cooled remove the skin from the sweet potatoes, mash, and stir until smooth (I did not need
to remove the sweet potato "strings")
Beat together the sweet potatoes, milk, eggs, flavorings, butter, zest of lemon, and spices just
until well combined (don't over mix)
Pour filling into the pie shell and cook for about 1 hour, until the pie is set, remove and cool,
then serve with ice cream or whipped cream.
