FOR THE CREPES
4 eggs
1 pinch of salt
40g of butter
250g of flour
500ml of milk

FOR THE STUFFING
250g of ricotta
250g of boiled and squeezed spinach
Salt to taste
nutmeg to taste
100g of mozzarella
500ml of béchamel
parmesan to taste

Baking 180 °C for 30 minutes
(I using 2 baking dishes of 20 x 28 cm - you could use disposable aluminum trays for 4/6 portions or a larger tray)
