The Most Delicious Backpacking Dinner Muffin Recipe

*Please read description!*   This was probably the fourth time I have tried to make a video for this vegan backpacking meal -- the backpacking muffin. Each time I made this plant based backpacking recipe I left something big out, this time was no exception but I am posting anyway. I left out the almond butter, but also forget to mention how you can dehydrate these muffins.  Please see recipe's author notes for more information on that below.  An alternative to dehydrating is to simply bake them longer at the regular temperature, or bake them longer at a lower temperature.  This dries them out and makes them lighter. I have also frozen them in a container with a loose fitting top to draw some of the moisture out.  I found a container at the bottom of my freezer that had the top off that were three months old and they were still delicious, maybe the best I had eaten on the trail.  They are a perfect alternative to a cold soaked stoveless meal especially for winter backpacking food. With a small adjustment, they can easily fit into a whole food plant based backpacking meal plan and with the right oats they are a gluten free backpacking meal. If you were searching for a vegan backpacking recipe and want to make something a bit different, try these. They are awesome. While I have only eaten them at the end of the day, they obviously be a perfect backpacking breakfast or fit into an ultralight backpacking lunch and because they are completely nutritious you could eat only these muffins all day and do just fine!

Cook for 50 minutes at 350 degrees
Here is a note from the creator Mr Tangable : "So to dehydrate them I take a toothpick and prick them 5 times to let them breathe a bit and then dehydrate them in my dehydrator for about 12 hours. They are still kind of softish in the middle but once you put them in a plastic tub they turn into rocks within a day or two. To eat them I just dunk them in a bowl of water for about 30 seconds to a minute and usually I will put a little nut butter on them...I eat them both ways, when at home I keep them wet, they refrigerate well and last a week and when I am hiking I dehydrate them. I think you will be pleasantly surprised by their weight dehydrated."
