Making cornish chicken with potato and dubla on the outside fire

Cornish chicken is a tougher bird than the chicken you would normally get at the local supermarkets and is ideal for longer cooking out on an open fire as it takes much longer to cook till soft.  Whether what we call cornish chicken here in South Africa is the same as the birds found in the rest of the world I'm not sure.  What I do know is that when they are cooked into a curry, they taste delicious!

Ingredients:
1.5kg Cornish Chicken pieces (1/2 cornish hen)
For the Marinade
1 tbs chicken spice
1 tbs crushed ginger and garlic
1 tbs lemon juice
1 tbs Worcestershire sauce
1/4 cup oil

For Braising the curry
1 large onion sliced fine
1 small tomato chopped
Handful of curry leaves
1/2 tsp dried thyme
1 cup dubla/double beans
Biryani Mix which includes:
Cinnamon Sticks
Star Anise
Fennel Seeds
Elaichi (green cardamom)
Bay leaves
1 curry spoon of mixed masala
1 tbs hurdee (tumeric) powder
1 tbs rough salt
1 cup cooking oil - adjust according to the fattiness of your bird
Dhania and spring onion to garnish

Serve hot with rice or rotis and carrot salad or a spicy sambals.
