This moist, carrot-filled cake has an amazing taste, and in a duet with butter cream, it exceeds all expectations.


INGREDIENTS FOR CARROT CAKE:
(CAKE 23 CM IN DIAMETER)

For cake layers:

carrot - 400 g
eggs - 4 pieces
sugar - 250 g
vegetable oil, odorless - 240 ml
flour - 300 g
walnuts - 150 g
orange peel and juice 1
soda - 1 tsp
baking powder - 1 tsp
butter - 10 g
salt - 1 tsp

For cream:
Mascarpone cream cheese - 220 g
Philadelphia cream cheese - 220 g
powdered sugar - 250 g
butter - 100 g

To begin, grate the carrots on a fine grater. It is important to use a fine grater then you will not feel the carrot in the cake at all.

Next we need to combine all the dry ingredients. Pour the pre-sifted flour, baking powder and soda into a separate container. All mix well with a whisk.

Now we need to beat the eggs with sugar in the foam. For this, I will use the stationary mixer Russell Hobbs. First, pour 4 eggs into the mixer bowl and add a pinch of salt. Turn on the mixer and beat some eggs and now add sugar in small portions. Well, beat the eggs with sugar until light foam.

Now pour a thin stream of sunflower oil.

Gradually add the flour mixture in small portions and knead the dough. Add the juice of 1 orange to the already well mixed dough and mix it for a couple of minutes.

We take out the bowl from the mixer, it is convenient that its volume allows you to knead the dough in it and do not need to use other dishes. Add 1 orange and carrot zest into the dough, which we grate.

Mix everything well and our dough is ready. Divide the dough into three equal parts.

I strongly recommend dividing the dough, rather than baking it with one cake, since it is quite heavy and in the case of baking at a time, it may not be baked. bake cakes in turn for 25 minutes at a temperature of 180 ° C. Then remove and cool.

While baked cakes prepare the cream. We send soft butter to the mixer bowl and gradually add powdered sugar. Our goal is to get air mass. Continuing to whip, add the cream cheese and whip the cream until fluffy. I use 2 types of cheese, Philadelphia and Mascarpone. Since we still have New Year’s dessert, I wanted to save on food and make a truly festive dessert. But this cake goes well with the usual sour cream, so you can safely prepare its budget version for every day.

Put the finished cakes on a dish and coat well with cream. Now decorate the cake. I decided to make a simple, but very New Year's decor with the help of rosemary twigs and cranberries. By the way, cranberry sourness will give a special piquancy to the tender cake and will slightly tint the carrot sweetness.
