Twisted Pair is where you take two wires and twist them together, and then you send one signal down both wires - but you send the inverse down the other wire, i.e. if you send +5 down one, you send -5 at the same time down the other.

When Electromagnetic Interference (EMI) happens to the wire, it happens equally and in the same voltage direction to both wires. This means if we look at the difference in voltages between the two signals, irrelevant of any noise on the line, we're able to reconstitute the original signal back together.

EMI comes from almost everything electrical - powerlines and cables, transformers, motors (in things like nearby printers etc), TV's, wifi units, Bluetooth things, Zigbee devices - some of these are purposefully putting signals into the environment, some of these not.

This video simulates noise on a wire, as well as noise on a twisted pair and shows how the original signal can be resolved from even a very noisy wire, allowing for better transmission of data.
