How To Make Kenyan Bhajia (Recipe)

Today I am back with another recipe that gives me good memories and reminds me of home. These are Kenyan bhajias, I know there are different ways of making them but this is my version but can also be tweaked to suit your liking and taste. I love my bhajias with a tangy sauce like tamarind (ukwaju) hence the lemon at the end since I didn't have any and also some good chilli sauce works well too or some kachumbari. The list goes on with all the sauces you can use with this, anyway I hope you try them and tell me what you think. You will notice that I made the paste at the end and also spooned some flour onto the potatoes before that. I do that to avoid the moisture from potatoes making the paste watery and not adhering to the potatoes which is where the flavour is, my paste was also super thick and only relied on the potato moisture to make the consistency perfect. RECIPE
- 4 Tbs gram flour
-1 tsp each or coriander, cumin, turmeric, garlic powder
- Chopped coriander leaves
- Salt to taste
- Water for the paste
- Cayenne to taste
- I used 3 medium-sized potatoes
- Vegetable oil for frying
- Lemon wedges for garnish
