Singapore Stir-Fry Noodle Recipe (Chinese Style Cooking)
Welcome to Xiao's Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.
Singapore Stir Fry Noodles is a dish of stir-fried rice noodles seasoned with curry powder, coriander and turmeric powder. It also includes bean sprouts, soy sauce, and chilli peppers. This is an easy dish to make at home.
Ingredients:
100g Thin Rice Noodles
1 Tsp Curry Powder
1 Tsp Coriander Powder
1 Tsp Turmeric Powder
2 Eggs
2 Spring Onions
3mm Ginger
2 Cloves Garlic
3 Red Chillies
1 Carrot
50g Bean Sprouts
4 Tbsp Peanut Oil
Coriander to Garnish
Salt to Taste
Methods:
1. Soak rice noodles in hot water for an hour until soft then drain.
2. Finely chop the garlic and the ginger.
3. Thinly slice chillies and spring onions, cut the carrot into thin threads.
4. Break eggs into a bowl and beat until light.
5. Heat 2 Tbsp peanut oil in a wok.
6. Add the eggs and stir-fry for 1 minute, and then transfer into a dish.
7. Heat the other 2 Tbsp peanut oil in a wok.
8. Add the chilli, spring onions, garlic, ginger, carrot, curry powder, coriander powder and turmeric, bean sprouts, fry for a minute.
9. Add eggs and stir, then add noodles, salt to your taste and stir-fry for 3 minutes.
10. Transfer onto a dish, garnish with coriander and enjoy.
