Give this vegan, healthy and delicious Zucchini Kofta Curry, cooked in an Instant Pot (Non-Fried Version) a try!
Ingredients:

For the Kofta -
Zucchini 2 Medium (Grated)
Cilantro - 2-3 tbsp
Besan - 3/4 Cup
Carrom Seeds (Ajwain) - 1/4 tsp
Salt to taste
Turmeric Powder - 1/4 tsp
Red Chili Powder - 1/2 tsp
Coriander Powder - 1 tsp
Cumin Powder - 1/2 tsp

For the curry -
Tomato (Pureed) - 3 Large
Onion(Finely chopped) - 1 Large
Cilantro - 2-3 tbsp
Besan - 1 tbsp
Cumin Seeds (Zeera) - 1 tsp
Salt to taste
Turmeric Powder - 1/4 tsp
Red Chili Powder - 1/2 tsp
Coriander Powder - 1 tsp
Cumin Powder - 1/2 tsp
Garam Masala - 1/2 tsp

Step 1 (Preparing the Kofta / Zucchini Balls)

Squeeze out maximum water from the Zucchini and keep aside. (Do not throw the water, we will use it while making the gravy)

Now to the grated Zucchini add Salt, Turmeric Powder, Red Chili Powder, Coriander Powder, Cumin Powder, chopped Cilantro and the Gram Flour.
Add gram flour gradually and keep mixing it, till the gram flour is coated well and it becomes thick batter consistency.
Please note since we have added salt to this mixture prepare the koftas right away. Do not let this batter sit for long because of the added salt the zucchini will leave more water. Prepare the koftas immediately.

Take a skillet / appam pan. Once hot, add a few drops of olive oil.
Pour a tablespoon of the Zucchini batter in each of the fissures of the appam pan.
After a minute you can flip it and cook it from the other side.
Once it’s golden brown from all the sides you can take it out and prepare all the koftas the same way.
These Koftas taste delicious as is also! :)

Step 2 (Preparing the Curry)

Turn on the instant pot on sauté mode or heat a skillet, add oil.
Once the oil is hot add cumin seeds, once they splutter, add cloves and then add the finely chopped onions and also a pinch of salt so onions get cooked quickly.
Sauté the onions for 3-4 mins or till they turn translucent.  
After that add grated ginger and garlic. Cook it till the raw smell of ginger and garlic is gone.
Then add tomatoes (Pureed), cook the masala now till the water from the tomatoes evaporates and it oozes out oil.
Once it leaves the oil, add Gram flour(Besan) and again cook it for a few minutes.
Then add water to the gravy and adjust the consistency of water as per your liking. The kofta will also be absorbing the water from the gravy as well, so add the water accordingly.
Give it a boil and then add the prepared kofta / Zucchini balls, cilantro, and green chilis to the curry and cook for another minute. Now turn the instant pot/ Stove off and add garam masala and cover it and let it sit for 5-6 minutes. The dish is ready to be served!

Enjoy this dish with any bread of your choice. It goes very well with Chapati or Naan.
