Authentic Kerala Dishes with my personal Touch 😍

Ingredients

Rice -2 cups
Water - 17 cups
Salt-3tsp
Cinnamon -1
Cloves -4
Cardamom -2
Pepper -10
Caraway seeds -1 pinch
Bista -
Cashewnuts -
Raisins
Ghee -1tbsp
Coconut Oil -1tsp

Method

Soak 2 cups of jeerakashala rice in water after nicely washing it. Soak for 20 mins. Then drain the water and keep it aside. Now take 2 onion and slice it lengthwise . add some salt and sugar to it, so that it fries easily. The temperature should be medium heat. Take a kadai and heat oil and ghee. On medium heat fry the onions. Stir ocassionally. When it is light brown you can take it from fire. You can preserve this onions fried for future use as well. In this same oil add some cashew fry it . remove from fire when it is slight brown. Add raisins and fry it to it. Take Approximately 17 glasses of water in a deep bottomed pan. Add whole spices- cinnamon , cloves, cardamom,pepper and sha jeera. Add salt – the water should be a bit salty. Add a tsp of coconut oil and ghee. Heat the water to boiling. Upon boiling add the rice. After 7 mins check the rice. If it is 3/4th done, then remove from fire. Drain the water. For making the dum. Take an old tawa. Then take a deep pan for setting the rice. Grease the pan with ghee. Add a layer of rice, then add a layer of Bista(onion fried), then cashew and raisins. You can sprinkle some yellow colour/turmeric milk/pineapple essence. Repeat the process. On low flame heat the tawa. Close the pan tightly. Heat it for 20 mins. Ghee Rice ready!!!!
