How to make a Venison Ragu, venison bolognese, using fresh ground venison.
A great way to use up the trim from butchering your deer. I added pork cheeks to the mix as this is the tradional way of making a ragu in italy. The addition of pork adds much needed fat and sweetness to the dish and ramps up the flavour.
