Originating in the picturesque English county of Wiltshire: Lardy cake is sweet and sticky bread-like cake that dates back hundreds of years. As the name suggests lard instead of butter forms the base of this cake, giving it a unique texture and flavour profile, when combined with homemade candied peel and soaked dried fruits.
In this episode we'll be taking you back in time by showing how to make this moreish treat as well a tasting session at the end delivering our verdict.
Enjoy.
For dough
- Bread flour 300g
- Warm milk 150g
- Caster sugar 50g
- Lard 50g
- Egg x1
- Fresh yeast 10g*
- Salt 5g
*7g dry yeast
- Mixed fruit 200g soaked in: *
- Gin 4 tablespoons
- Juice from one orange
- Zest from 1/2 orange
- Juice of lemon
- Zest of 1 lemon
* in the episode I mentioned that I
soaked the fruit in 150ml of
water but I made the cake a
second time and used the
ingredients above for more
flavour
For lardy
- Candied peel 50g
- Lard 225g (room temp)
- Caster Sugar 225g
