Ingredients for sponge dough (中种面团):
410g (3 cups) bread flour (面包粉)
2 1/4 tsp instant yeast (即溶酵母)
250ml cold water (冷水)

Cover and leave to proof for 2 hours
盖好,让它发酵2小时

Main dough (主面团):
180g (1 1/3 cups) bread flour (高筋面粉)
2 tbsp milk powder (奶粉)
2 tbsp caster sugar (细砂糖)
1 tsp salt (盐)
90ml cold water (冷水)

30g (2 tbsp) butter(牛油)

Two 8”x4”x4” loaf tin
2个8寸x4寸x4寸吐司模
