CRISPY sweet and sour TOFU!

To make this you will need (2 people portion):

For the tofu:
250gr firm tofu
2tsp paprika powder
1tsp ginger powder
1/2tsp salt
1/2tsp pepper
3tbsp cornstarch
Oil for frying

Veggies:
2tbsp oil
3 cloves of garlic
1/2 red chili pepper
1 bell pepper (I used half red and half green)
1 red onion

For the sauce:
2tbsp soy sauce
1tbsp rice vinegar
150ml pineapple juice
2tbsp brown sugar
2tbsp tomato ketchup
1tbsp cornstarch+1tbsp water

Garnish (optional):
toasted sesame seeds
green onion

Start by cutting your tofu into bitesize pieces. Since I don't own a tofu press I like to press my tofu between a kitchen towel and then add a cutting board on top and a heavy pan. I like to cut my tofu before pressing it instead of pressing the whole block since you get way more water out of it this way I think. Press the tofu for 10-20 minutes.

Once pressed add the tofu to a clean bowl and add the seasonings and the cornstarch. Mix this carefully until everything is coated. Heat up some oil (enough to cover the bottom of the pan) and once it's hot add the tofu pieces. Make sure the oil is hot before adding the tofu or otherwise it won't get as crispy. You can test if the oil is hot enough by adding a piece of tofu in and if bubbles form around, the oil is hot enough (see video to see what I mean). Add all the tofu and fry the pieces for 5 minutes on each side (10 minutes total) on medium heat until crispy. Once done take them out and let them leak out on a bit of kitchen paper towel.

For the veggies, start with the 2tbsp of oil in a pan or wok. Heat the oil and then add the minced garlic and chili pepper. You can also add some fresh ginger at this point if you like. Fry this for 30 seconds until fragrant, then add the bell pepper and red onion. I cut my bell pepper and onion pretty big for this recipe. Cook the veggies until they're golden brown but still crispy (about 5 minutes on medium heat).

In the meantime mix all the sauce ingredients except the cornstarch mixture (we'll add that later on).

Once the veggies are cooked, add the sauce and let simmer for about 3 more minutes. Then add the cornstarch mixture and immediately stir this in while pouring it in to prevent lumps in your sauce. Cook this until thickened (about 1 minute) and then turn off your stove.

Lastly add the tofu right before you want to eat it. The tofu will lose some of it's crispiness when added to the sauce so add it right before serving.

Serve with some brown rice or noodles and top with some toasted sesame seeds and green onion if you want! Enjoy :)
