This video shows you HOW to demo smooth, but doesn't explain the steps or why.

When you record a demo, it records the positions of everybody in the map and your own camera view (Not your body though- you can't move the camera to see your player, only others). Since recording EVERYTHING would take up loads of information, it records the demo in 'ticks'- think of them as frames of a movie, where each is a short distance in time after the last.

Demo smoothing lets you reposition the camera at different 'ticks', letting you make smooth, professional looking fly-bys. Sadly the system is bugged in Source, so until they fix it, follow exactly what I say in this video and it should work. If not, use a bit of common sense and make sure you're not entering a tick that's beyond the end of the video, ensure that the ticks are selected and so on. It's all shown in this video but it's important that you watch it all, step-by-step.

Once you've smoothed the video you'll need to record it if you want to put it in a movie, do this the same way that you'd record any other bit of footage, with a program like fraps, hypercam or camtasia.
