Welcome to our kitchen! In today's video, we'll be showing you how to make a delicious and easy Upma. This classic South Indian breakfast dish is not only quick to prepare but also packed with flavors and nutrients.

Ingredients:
- 1 cup Rava (semolina)
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon urad dal
- 1 teaspoon chana dal
- A pinch of asafoetida (hing)
- 1 onion, finely chopped
- 1-2 green chilies, chopped
- A few curry leaves
- 1/2 teaspoon grated ginger
- 1/2 cup mixed vegetables (peas, carrots, beans)
- 2 cups water
- Salt to taste
- Fresh coriander leaves for garnish
- Lemon juice (optional)

Instructions:
1. Roast the rava in a pan on medium heat until it turns golden brown and gives off a nutty aroma. Set aside.
2. Heat oil in a pan, add mustard seeds, urad dal, and chana dal. Let them splutter and turn golden.
3. Add asafoetida, chopped onions, green chilies, curry leaves, and grated ginger. Sauté until the onions turn translucent.
4. Add the mixed vegetables and cook for a few minutes until they are tender.
5. Pour in the water and add salt to taste. Bring it to a boil.
6. Gradually add the roasted rava, stirring continuously to avoid lumps.
7. Cook on low heat until the water is absorbed and the Upma reaches a fluffy consistency.
8. Garnish with fresh coriander leaves and a squeeze of lemon juice if desired.
