Eggs - 2 dozens
Condensed Milk - 2 cans
Evaporated Milk - 2 cans
Lime Zest
Granulated Sugar - 1 cup

How to make the caramel

In a small pan, heat sugar until it melts and forms a caramel.
Put caramel in a molder (ramekins or llanera) and make sure the bottom part is completely covered. Let it cool down.

How to make the egg mixture

Separate egg yolk and egg white.
In a large bowl, combine egg yolk and evaporated milk, then break the eggs using a whisk.
Add condensed milk and lime zest.
In a separate bowl, filter egg mixture using a cheesecloth to remove lumps.

Fill up molder with egg mixture.
Cover with foil.
Steam for 30-35 minutes.
Using a toothpick, check if egg mixture is done. If toothpick comes out clean, it is cooked. Remove from steamer and let it cool down.
Chill in the fridge before serving.
