Carrot Cake Pops
Servings: 10
1 cup applesuace, no sugar added
1 tsp ground nutmeg
1/3 cup brown sugar
2.5 tsp baking soda
2 cups carrots, shaved/shredded
1/4 cup shredded coconut, unsweetened
2 large eggs
1 cup all purpose flour
1 cup whole wheat flour
1/2 cup light coconut milk
8oz crushed pineapple, in juice (no syrup)
1/2 cup raisins
2 tsp ground cinnamon
1 tsp ground clove
1.25 tsp vanilla extract
Icing
1 cup nonfat, plain Greek yogurt
½ tsp vanilla extract
¼ cup powdered sugar
Preheat oven to 350 degrees
In a large bowl beat together eggs, apple sauce, coconut milk and vanilla
Stir in cloves, nutmeg, cinnamon, baking soda, flours, pineapple with juice, 1 1/2 cups shaved carrot and shredded coconut. Mix till just combined.
Pour batter into cake pop tins, the number of tins will depend on their size and amount of batter. Take raisins and place in center of cake pops. Use reserved carrots to garnish each cake pop with a ring. Place in your preheated 350 degree oven for 30-40 minutes. Toothpick should be clean if inserted. Let cake pops cool to room temperature.
For icing: Combine Greek yogurt, vanilla and powdered sugar to make icing. Roll cake pops in icing until covered and refrigerate until served.
