Just in time for Easter, I'll show you how to ensure crisp outer shell and keep that chewy  marshmallow meringue centre for crowd pleasing dessert.  I top it with lightly sweetened whipped cream and fresh fruit of the season like berries, pomegranate or passion fruit.  Here are my step by step instructions on how to master and present a stunning Pavlova anytime of year. FULL RECIPE:  PAVLOVA

5 large egg whites, at room temp
1/4 tsp. salt (1 ml)
1 cup fine sugar (250 ml)
1 Tbsp.  corn starch or corn flour (15 ml)
1 1/2 tsp. apple cider vinegar (7.5 ml)
1/2 tsp. vanilla (2.5 ml)

Preheat oven to 325 D F with Fan on

Whip egg whites in a super clean bowl on medium high with salt until frothy. Gradually add the super fine sugar until very shiny and stiff.

Sift in the corn starch, add apple cider vinegar and vanilla and beat on medium for 1 minute, just to blend.

Spoon onto parchment paper lined baking sheet and bake at 325 D F for 10 minutes and reduce to 275 D for another 25-30 minutes or until crisp.  Turn off oven and cool completely inside oven with door closed.

Top with lightly sweetened cream and favourite fruit.

Serves 8-10
