Experience a unique twist on a classic snack with this Crispy Fried Brinjal Delight. Slices of brinjal are coated in a spiced batter, rolled in crunchy corn flakes, and fried to perfection. 📕 Recipe

*Ingredients:*

- 3 large brinjal (eggplant)
- Cold water (for soaking)
- 1 cup all-purpose flour
- 1 egg
- 1 tsp salt
- 1 tsp garam masala
- 1 tsp coriander powder
- 1/2 tsp black pepper
- Water (as needed for batter)
- 1 cup corn flakes (crushed)
- Oil (for frying)
- Mayonnaise (for garnish)

*Instructions:*

1. *Prepare the Brinjal:*
  - Peel the brinjal and cut it into thin slices.
  - Soak the slices in cold water to prevent them from browning.

2. *Prepare the Batter:*
  - In a mixing bowl, combine the flour, egg, salt, garam masala, coriander powder, and black pepper.
  - Add water gradually and mix until you achieve a smooth batter consistency.

3. *Coat the Brinjal:*
  - Remove the brinjal slices from the cold water and pat them dry.
  - Dip into the batter, ensuring it is well-coated.
  - In another bowl, place the crushed corn flakes.
  - Roll the batter-coated brinjal slices in the corn flakes to cover them completely.

4. *Fry the Brinjal:*
  - Heat oil in a pan over medium heat.
  - Fry the coated brinjal until they turn golden brown and crispy.
  - Remove and drain the excess oil on paper towels.

5. *Serve:*
  - Arrange the crispy fried brinjal slices on a plate.
