THE CHRISTMAS DIARIES: 8th day of ADVENT!!!
We celebrate a very international Christmas, combining Danish and Cypriot traditions - because, why not?!
Here's the recipe for Maria's delicious Greek & Cypriot cookies:
MELOMAKARONA
Syrup:
600g sugar
400ml water
peel of 1 orange and 1 lemon
2 cinammon sticks (or 1tsp ground cinnamon)
4 whole cloves
juice of 1 lemon
200g honey
Bring to the boil in a big saucepan, reduce heat to medium, simmer for 3-5mins.
Remove from the heat, add lemon juice and honey. Let cool completely.
Cookies:
Dry mix:
1kg flour
300g fine semolina
100g sugar
pinch of salt
2-3 tsp cinnamon
1tsp ground clove
1tsp vanilla extract
1 heaped tsp baking powder
Wet mix:
350 fresh orange juice
zest of 1 orange
50ml cognac/brandy
300ml sunflower oil
300ml olive oil
1tsp bicarbonate of soda

Combine ingredients in each mix separately, then add wet mix into dry. Stir until just combined, and rest dough for 5 mins.
Preheat oven to 175c, form oval shaped cookies and place them onto lined baking sheets. Bake for 25 mins or until golden.
Remove cookies from the oven and immediately submerge them in the syrup 6-8 at a time, for about 30 seconds on each side. Take them out with a slotted spoon and place them back on the sheet or into a deeper dish in a single layer. Pour the remaining syrup over and let stand for 1 hour.
Roll the cooled melomakarona in roughly ground walnuts or pecan nuts/ drizzle with dark chocolate or sprinkle with dessicated coconut to your liking.
