Ending the week with something
Ending the week with something sweet! Lemon blueberry bundt cake.
2 1/2 cups flour
1 tablespoon for blueberries
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 cups of sugar (can use 1 cup white sugar and 1 cup brown sugar)
2 tablespoons of lemon zest
1 cup of butter room temp (I use salted but you can use unsalted)
4 large eggs room temp
1/4 cup lemon juice
1/4 cup vegetable oil
1 tsp of vanilla
1 cup sour cream room temp
1 1/2 cups of blueberries( use 2 cups if you have it)
you can add a simple glaze to your cake also with just some powdered sugar and lemon juice.
1 cup powdered sugar
2 tablespoons of fresh lemon juice
Mix until smooth and pour over cooked cake
bake 350 for 50-55 minutes
