Low Carb Vanilla Cake

The easiest 'mug' cake and the tastiest!!  And low carb so its great for people cutting their sugar including Diabetics!  
Ingredients:
1 tbsp coconut flour
1 egg beaten lightly
1 tbsp butter melted
1 tbsp cream cheese melted
1/2 tsp baking powder
1/4 tsp vanilla
1/4 tsp liquid stevia
Directions:
Melt the butter and the cream cheese together.  Mix well.  Add the vanilla, stevia, and egg and mix thoroughly.  Blend the coconut flour and baking powder and mix into the wet ingredients.  Spoon into a buttered microwaveable ramekin dish.  Microwave at high for 1 minute, 30 seconds (90 seconds)  Once done, take care because the dish will be VERY hot.  Using oven mitts remove dish from the microwave.  Let stand for 3 minutes.  For the icing, take 1 tbsp of melted butter, 1 tbsp unsweetened cocoa and 1 tbsp of powdered icing 'sugar' sweetner and about 1/8 tsp of vanilla.  Mix well.  Set aside. Take a knife or spatula and run it around the edge of the ramekin and it plate the cake.  Pour the icing sugar over the warm cake and voila! you have an easy, tasty and low carb cake you can enjoy with no guilt!
