How to Debone and Roast a Lamb Leg in the Weber

Want to learn how to debone a lamb leg? As a qualified butcher, this is something I used to do daily! So let me show you in this video!
I'll show you how to bone out a lamb leg, string it up and cook it too!
You can follow the temperature guides in this video to cook in your oven instead of the Weber too!
We'll be using the most basic lamb leg boning method, the "slash boning" method is what we used to call it. Now you can get pretty fancy when boning out a lamb leg, but in this video, we're keeping it basic. I might show a few other techniques in the future!
You can also get really creative when you've deboned a lamb leg, you can stuff the inside with a certain flavour and have a different flavour on the outside too!
But again, we've kept it basic for this video and used our new "Garlic Goals" seasoning on this lamb leg. With notes of garlic, butter, herbs along with your classic salt and pepper, it's perfectly paired with lamb!
For reference, our Weber temperature was around 450F/230c and we cooked our lamb until it reached an internal of 145F/63c which took around 2.5 hours. I didn't weigh the roast after it was deboned but i'd imagine it would have been around the 2-2.5kg mark.
Now this lamb was something special, it's the "Roaring Forties" brand lamb and we picked this up from our butcher at Austral Meat here in Adelaide. It's honestly the best quality lamb i've come across. So if you can source some, definitely give it a try!
