Drain the water and add it to a cooker along with tomatoes, salt and turmeric powder. Mix well. Cover and cook for 3 to 4 whistles on medium flame. Once the cooker releases steam naturally, open the lid and add garam masala, jeera powder, aamchur powder and red chili powder. Do not mix. In a small tempering pan, add oil. Once the oil is hot, add cumin seeds and stir it for 15 to 20 seconds. Pour this hot oil over the masalas we just added to the the dal. Garnish with coriander and keep aside. Dal is ready. To Make Pakwan - To a mixing bowl, add wheat flour, salt, carom seeds and 1 TBSP oil and dry mix thoroughly. Then make a dough similar to chapati dough by adding water little by little at a time. Cover and keep aside for 15 minutes. After 15 minutes, add the remaining 1 TBSP oil and knead the dough for a minute or two. Now take a small portion from this dough, add a little oil to the rolling surface and roll it into a thin chapati. It should be really thin since the pakwans are supposed to be crispy. Poke several holes in it with the help of a fork and deep fry till it becomes golden brown on both sides. Make all pakwans in the same way!
