Spicy udon noodle stir fry!

To make this recipe (for 2 people) you will need:

400gr udon noodles
200gr oyster mushrooms
1 red bell pepper
130gr green beans
1 red onion
2tbsp oil
2 cloves garlic
1 red chili pepper

For the sauce you will need:
3tbsp soy sauce
1tbsp sesame oil
1tbsp vinegar
1/2tbsp brown sugar
1tsp ginger powder
1/2tsp pepper
100ml water
1/2tbsp cornstarch +1/2 tbsp water

Optional for garnish: sesame seeds and spring onion

Start by adding the tablespoon of oil to a pan and add the minced garlic and chili pepper. Cook this for 2 minutes on low heat. Then add the red onion and the oyster mushrooms and cook for 2 more minutes on low to medium heat. Then add the bell pepper and the green beans and cook this for about 5 minutes on medium heat, stirring occasionally. In the meantime cook the udon noodles according to the instructions on the package. Once the veggies are cooked turn the heat to low and add all the sauce ingredients except the cornstarch mixture. Mix the sauce ingredients in with the noodles and veggies and then lastly add the cornstarch mixture. Mix this and cook until sauce thickens (about 1 minute on low heat). Top with sesame seeds and spring onion if you want. Enjoy!
