What could be more delicious than Northern cuisine? In Northern Iran, people have a strong fondness for this cuisine. Especially within my family, this dish holds a significant and special place. Every time I think about this dish, I get excited. We made "Kabab-e Torsh" (sour kebab) with my family in the courtyard of my grandmother's house. The blend of cool air and the comforting warmth of the fire created a wonderful feeling for us.

The sense of unity and the pleasure of a regional dish can be such a meaningful experience. In Northern Iran, particularly, sour kebab is among those dishes that not only have a unique taste but also play a vital role in family culture. For families like mine, this dish symbolizes specific and essential qualities, evoking excitement and liveliness whenever it comes to mind.

When we prepared this sour kebab in the courtyard of my grandmother's house, the combination of the cool autumn air and the pleasant heat of the fire transformed those moments into a truly remarkable experience.
