Grilled halloumi skewers | How to cook halloumi

Halloumi is a cheese from Cyprus. It's a brilliant cheese because it acts as a great ancillary for other flavours, and it can also stand up to grilling and frying, without melting. It has a salty kick, and a squeaky texture, which as much as it sounds off putting, it really isn't. Think of salty mozzarella, and you get some idea what halloumi is like.

Today I'm making halloumi and vegetable skewers. they are coated in a marinade of chilli, lemon juice, olive oil, oregano, salt and pepper. Leaving it to marinade for a good hour, allows the marinade to permeate through the cheese and vegetables, giving it a wonderful flavour. The vegetables i'm using are courgettes, red onion and bell pepper. You can of course use different vegetables to suit your tastes. you want firm vegetables that can stand up to grilling.

To make my grilled halloumi and vegetable skewers you will need:
►225g of halloumi cheese
►1 red bell pepper
►1 medium red onion
►1-2 courgettes (zucchini)
►1 hot red chilli
►1/2 tbsp or oregano
►Juice of 1/2 a lemon
►About 2 tbsp of olive oil
►Salt & pepper
Serve on there own or with pitta breads and a cool mint yoghurt dressing
