Nimki tea time snack

Ingredients:-
500g Plain flour/all purpose flour/maida
1 teaspoon Kalonji/Onion seeds/Nigella seeds
2 Table spoon Ghee/clarified butter or any cooking oil
11/2 teaspoon salt
1 Table spoon yogurt/curd/dahi (optional)
Water as required.
Oil for deep frying

Method:-
1. Measure and sieve the flour
2. Add salt, kalonji/onion seeds, ghee/purified butter, yogurt
3. Mix well and add water little at a time
4. Make the dough not too sof or too hard.
5. Cover with cling flim or damp cloth and rest for 15 mins.
6. Divide the dough into 5 equal parts
7. Sprinkle some flour on the board
8. Take one portion and roll the dough out.
9. Flatten the dough as shown in the video.
10. Cut out the flatten dough diagonally.
11. Flip with the knife so that the cut doesn't stick
12. Take a pan and heat the oil
13. Check if the oil is ready by dropping a piece of dough
14. Drop the cut out dough and gentle spread
15. Flip occasionally to cook evenly
16. Once it turns golden remove from the pan.
17. Continue the same way with the remaining dough (portion)
18. Put the nimkis in an air tight container or jar, can keep for weeks or even couple of months.
