Instant Pot Mini (3qt) Italian Sausage and Pasta in Creamy Tomato Sauce

This easy one pot pasta might be the best one yet!
Hot Italian sausage and tomatoes just go so well together and little touch of cream at the end marries them into the perfect sauce. The ingredients are simple and you probably have most of them in your pantry already. There’s also plenty of room for customization according to your personal tastes.
Serve with a salad and some garlic bread and you've got a complete meal. Try it!

NOTES:
   • Can I make this in a 6qt Instant Pot? YES! You can make this exactly as is, or double the ingredients for the 6qt. Cooking time remains the same.
   • Meat Choices: Italian sausage is always a winner in our house and 99% of the time we choose the hot version. But feel free to use a mild/sweet flavored Italian sausage if you prefer. If sausage isn’t your thing, you could also substitute with other ground meats such as lean beef, chicken, or turkey.
   • Pasta Choices: I’m using fusilli in the video, but any similar size/shape will work. Use something that has grooves or holes to trap the sauce and meat.
   • Canned Crushed Tomatoes: Crushed is always my first choice when making a pasta sauce. And most often, I’ll look for a fire-roasted one, but there are a lot of other seasoned or plain options out there. Next time you shop, spend a few minutes perusing the canned tomatoes section of your store. You might find one that could become your go-to favorite.

Today’s Ingredients:
2 TB extra virgin olive oil
1 small onion, chopped
1 lb ground Italian sausage (hot or mild, your choice)
3 cloves garlic, minced
1 tsp Italian seasoning
1 tsp salt
½ tsp black pepper
½ tsp red pepper flakes (optional)
2 cups chicken broth (Better-than-Bouillon & water in the video)
8 oz fusilli pasta (or other medium shape: rotini, penne, ziti, rigatoni, radiatore, etc.)
14.5 oz can crushed tomatoes (fire-roasted is tastiest)
½ cup heavy cream

Optional Toppings:
   • grated Parmesan cheese
   • chopped fresh parsley
   • garlic bread

Instructions:
   1. Preheat the Instant Pot on the highest sauté and add the olive oil when the display reads “HOT.” Add the onion and Italian sausage and cook, stirring every couple minutes, until the meat is no longer pink. Break up the meat into smaller crumbles each time you stir. This step will take about 6-8 minutes.
   2. Add garlic, Italian seasoning, salt, black pepper, and red pepper flakes. Cook, stirring continuously for another minute. No longer than a minute to prevent the garlic from scorching.
   3. Add 1 cup of the chicken broth to deglaze the pot. Make sure to scrape up any of the delicious stuck-on browned bits from the bottom to avoid getting a “BURN” warning later.
   4. Layer the pasta over the top. Spread out evenly and press down into the liquid without stirring up the bottom.
   5. Layer the crushed tomatoes over the top of the pasta. Use the remaining 1 cup chicken broth to swish out the can and pour along the edges of the pasta. Spread the tomato layer evenly and press down again, without stirring up the bottom layers.
   6. Lock and seal the lid and cook on high for 5 minutes followed by a quick pressure release.
   7. Stir in the heavy cream and give the pasta a taste check. Adjust seasoning to your liking.
   8. Cover loosely for 10-15 minutes to let the sauce thicken and absorb fully into the pasta. Serve with optional toppings and ENJOY!
