Mini Cheesecakes with strawberry sauce
Mini Cheesecakes with strawberry sauce are completely delicious. If you appreciate an easy cheesecake you will love this recipe! I fell in love with the flavor, texture and how completely EASY they were. The sweetened condensed milk making the cheesecake perfectly sweetened and creamy smooth.This recipe makes 24 cupcake-sized cheesecakes. I have only one tray of cupcakes so I used 2 small tart trays for remaining.
For the Crust:
1 1/2 cups any digestive biscuit crumbs (I used Marie)
6 Tbsp unsalted butter, melted
For the Cheesecakes:
15 pieces of cream cheese (yield 30 grams each) 450 grams, softened
3 large eggs, room temperature
14 oz sweetened condensed milk(1 tin 385ml)
Topping Ingredients:
1 cup strawberry sauce (I used my homemade sauce here's the link for recipe that is from my old channel

Make the Crust:
Prep: Preheat Oven to 180°C. Line a muffin tin with standard cupcake liners. Combine 1 1/2 cups biscuits crumbs, 6 Tbsp melted butter. Stir to evenly moisten crumbs.
Divide crumbs between cupcake liners (about 1 Tbsp in each). Push crumbs into the base and as well as in the tart trays.
How to Make Mini Cheesecakes:
Beat together cream cheese and 3 eggs with on high speed 5 minutes, until blended and smooth, scraping down bowl as needed. Add condensed milk and mix on low speed until blended (2 min).
Divide cheesecake mix evenly between cupcake liners - about 3/4 full and bake for 15 min. They should be set with a very slight jiggle in the center. Don't over-bake. If you notice them starting to crack in the oven, they are over-baking.
Cool to room temp in baking dish then spoon 1/2 to 1 Tbsp sauce over each one.
Refrigerate 2 hrs or until fully chilled then serve with or without liners.
