Following these procedures will help keep the right ratio of liquid mix to air inside the freezing cylinider. Air is critical to keeping the froyo or ice cream "fluffier". If there is not enough air and too much mix in  the cylinder when you hit FREEZE, the froyo will be softer and wetter and heavier.

Morning Procedures for Stoelting F231 with older style air tubes

1) Machine will be in sleep mode in the morning meaning the mix will be closer to liquid like is when its in the hopper tanks on top

2) Pull the air tubes out of the hopper and rinse them to make sure there is no built up "gunk" that will clog the holes

3) put the air tubes back in the hoppers and whisk the mix in the hoppers the best you can. This helps the flow through the feed hole in the air tubes. Most common problem people have is the machine stops dispensing because the air tubes get stopped up and no mix can get in the cylinder. This is called "frozen cylinder" and you have to wait an hour for it to melt and clear out

4) Dispense at least 50% of the cylinder into a pitcher and pour it back in the hopper. You can even dispense the entire cylinder so don't worry about dispensing too much. You are doing this to allow new liquid and new air to flow into the cylinder and refresh things. The air tube allows the right amount of air and mix into the freezing cylinder. At night, you lose a lot of this air. If you hit freeze right after the machine has been in sleep mode all night, your froyo will be denser, softer and "wetter" because there isn't enough air in the cylinder. Remember, there needs to be around 50% air to 50% mix before you hit FREEZE. But do not hit FREEZE button before the mix has time to feed into the cylinder.

4) Wait 10 minutes. It is critical to wait because the new mix needs time to go through the little feed hole in the air tubes. If you hit freeze buttons too fast, there will not be enough mix in the cylinder and you will freeze the cylinder and have to wait an hour

5) After you wait 10 minutes, then hit FREEZE button on both sides

6) After the machine cycles, enjoy fresh and delicious froyo or ice cream

7) During the day: whisk the hoppers every few hours to avoid build up and clogging. On slow flavors, pull the handle and dispense around 12 ounces and pour back in hopper and whisk. This will refresh the cylinder a little because when a handle is not being pulled for a few hours, it starts to lose air and gets a little softer and wetter
