Hello, this recipe will make an 8 " round Pithivier which serves 8
Bake in a Fan Oven (middle shelf at 180 c for 45 minutes.
Ingredients :
Pastry Cream
125ml whole or skimmed milk
1 egg yolk
20 grams caster sugar
15 grams plian flour
1/2 tsp Vanilla essence
Frangipane:
80 grams Soft unsalted butter
80 grams Caster sugar
80 grams Ground almonds
1 Whole egg
1 1/2 tsp Vanilla essence
1 1/2 tsp Dark rum
500 grams of Puff pastry: for base and top of tart
1 egg and 1 tablespoon water (for the glaze)
25 ml and 25 grams of white sugar for the sugar syrup
