Quick Pav Bhaji Recipe using Sweet Potato | Priyanka Uppal

This video is "Pav Bhaji" using Sweet Potato. It is a healthy version of Pav Bhaji using Sweet Potato insted of Potato.

Ingredients:
3-4 Sweet Potato (Shakarkandi)
1-2 Zucchini  
1 Bottle Gourd
1-2 Bell Peppers: Green and/or Red and/or Orange
Ginger, Garlic, Green Chilies

For Tempering:
1 Tbsp Cumin Seeds
1 Tbsp Fenugreek Seeds
Fresh Curry leaves

1 Chopped Onion
1/2 Cup Corn (Canned or Frozen)
1/2 Cup Peas (Canned or Frozen)

Spices:
Salt to taste
2 Tbsp Pav Bhaji Masala
Red Chili Powder (OR, Cayenne Pepper)

Method:

Cook the Vegetables until they are really softened (Add Salt and Pav Bhaji masala). Using a blender or masher, Blend the veggies once they are fully cooked. Prepare Tempering: Heat Oil in a pan. Add cumin, fenugreek seeds and fresh curry leaves until they turn fragrant and/or darker brown. Add Chopped Onion, sauté for a 2-3 minutes. Then add Corn and Peas and saute for another 2-3 minutes. Season with salt and red chili powder. Add this tempering to cooked mashed veggies. Add juice of a lemon, cilantro (coriander) and give it a stir.
Serve with Fresh dinner rolls, thinly sliced onion.
