Cheongyang pepper mayo sauce

[Ingredients]

* Basic version

2/3 cup (140g) mayonnaise
1 tbsp (10g) sugar
2 tbsp (20g) vinegar
3 (20g) Cheongyang peppers
1 tbsp (10g) dark soy sauce
Scallions

* Soy sauce version

2/3 cup (140g) mayonnaise
1 tbsp (10g) sugar
2 tbsp (20g) vinegar
3 (20g) Cheongyang peppers
1 tbsp (10g) dark soy sauce
Scallions

* Wasabi version

2/3 cup (140g) mayonnaise
1 tbsp (10g) sugar
2 tbsp (20g) vinegar
3 (20g) Cheongyang peppers
1 tbsp (10g) dark soy sauce
1/2 tbsp (7g) wasabi
Scallions

[Directions]

* Basic version

1. Slice the Cheongyang pepper in half and finely chop.
2. Chop the scallions.
3. Put Cheongyang pepper, mayonnaise, sugar, and vinegar in a bowl.
4. Mix until the sugar is dissolved.
5. Put the sauce in a small bowl and sprinkle some soy sauce.
6. Finish with the scallions on top.

* Soy sauce version

1. Slice the Cheongyang pepper in half and finely chop.
2. Chop the scallions.
3 Put Cheongyang pepper, mayonnaise, sugar, vinegar, and dark soy sauce in a bowl.
4. Mix until the sugar is dissolved.
5. Move to a small bowl and finish with the scallions on top.

* Wasabi version
