Copper is a microelement which is needed for human.
Copper found in foods including:
legumes, mushrooms, chocolate, nuts and seeds, and liver are high in copper.
Cooper is well absorbed in small intestines.
Adequate copper intake permits normal utilization of dietary iron in that intestinal iron absorption, iron release from stores (e.g. in macrophages of liver and spleen), and iron incorporation into hemoglobin are copper-dependent processes.
So copper is important for normal blood cell functioning.
Adequate copper intake is important to prevent anemia.
Copper also has other functions like:  assists in blood coagulation and blood pressure control; cross-linking of connective tissues in arteries, bones, and heart; defense against oxidative damage;
Copper deficiency can cause osteoporosis. Which can be treated copper supplements.
But  copper deficiency is rare.  Copper requirement increases during pregnancy and lactation.
Copper gluconate is the only copper supplement listed by the United States Pharmacopeial Convention for oral use.
10 mg. cupric gluconate day, for  12 weeks is possible safe dosage.
But intake  for long periods, for  Adults have tolerated daily supplements of 3–7 mg.
Copper toxicity is rather rare in humans and animals, because mammals have evolved precise homeostatic control of copper due to the high reactivity of the free metal.
