Nasi Lemak literally translates to fat rice and is one of Malaysia's most loved dishes. Come try our version at Mei Mei (https://www.meimei.uk/) in Borough Market, or have a go making it at home.

What you'll need :

NASI LEMAK Recipe:
Coconut rice :
-2 cups of jasmine rice (approx 250g) - washed and rinsed three times or until the water runs clear
- 100ml coconut milk (the milky bit)
- 150g water
- 2 tbsp thick coconut cream
- Pandan leaves, knotted
-Salt or msg to season

Method:
1. Add rice into the rice cooker with water, coconut milk, pandan, and salt. Check the volume of liquid comes to the first crease of your index finger when you touch the top of the rice. Add more or less if needed.
2. Turn the rice cooker onto to cook.
3. Wait for it to cook - it's that simple!!
4. Once cooked, spread a layer of coconut cream over the rice and let steam for 5-10 minutes. Don't be tempted to fluff the rice yet.
5. Now you can fluff the rice and serve.

Add as much or little to the nasi lemak, we added
- cucumber
- hard-boiled egg
- soft runny egg too (we were feeling greedy)
- Sambal ( we used: shorturl.at/hkmE8)
- Ikan bilis (fried anchovies)
- Peanuts
