TIMES, YIELD and INFO: Makes: 250g of ketchup (1 cup) Preparation time: 10 minutes Cooking time: 55 minutes INGREDIENTS (US): First part: 14oz tinned tomatoes 13oz fresh tomatoes half medium shallot (1oz) 1 clove garlic 1oz coconut sugar, or any other preferred sugar 1⁄4 tsp mustard seeds, or 1⁄8 tsp of mustard powder 1 bud of clove 1⁄4 tsp ground allspice 1⁄4 tsp ground ginger 1oz red bell pepper tiniest pinch of cinnamon 1⁄8 tsp cayenne pepper 1⁄8 tsp sweet paprika Second part: 2 tbsp apple or cider vinegar 1⁄8 tsp agar agar powder mixed with a touch of water 1⁄4 tsp salt When measuring ingredients, make sure that all the measurements are level. This means discarding the ingredients that rise above the rim of the measuring cup, tsp, tbsp .etc. The back of a knife works perfectly for this.
