Veg Hyderabadi Nizami Handi is one of the most wonderful delicious mixed veg recipe.  Though the prcoess is time consuming, it is worth a try.  This veg diwani handi is a rich, creamy curry made with mixed vegetables. A restaurant-style vegetable handi that tastes damn good. Who doesn’t like restaurant food at home, we all do with no exceptions.

The recipe is called veg handi as the dish is made generally in handi, a kind of cooking pot used in Indian cooking with a shallow depth and a wide bottom.

Veg handi is best served with tandoori rotis, naan, parathas, rotis or any kind of pulav or fried rice.  Let check the ingredients :

For Quick Makhani Gravy:
2  medium sized tomatoes
1 No. Green chillies
1 inch Ginger
4-5 cloves of garlic
8-10 cashew nuts
1-2 Bay leaves
Cardamom
A pinch of salt
500 ml water

For the boiled veggies:

Boiling water
A pinch of salt
½ tsp turmeric
100 grams French beans
100 grams Carrots
100 grams Green peas
1/2 cup paneer cubes
You can add any veggies as you like!

For Cashew paste:

10-15  cashew nuts
Water to boil

• Boil the Cashew nuts for 8-10 minutes & grind them into a fine paste.

For final gravy:

Oil 2 tbsp
Ghee 2 tbsp
Jeera 1 tsp
Ajwain or carom seeds - 1/2 tsp
3 Green cardamom
1-2 Bay leaves
Cinnamon 1 stick
Chopped onions 1 big sized
Ginger garlic paste 1 tbsp
1/2  tsp Turmeric
Chopped tomatoes 1 big sized
Salt to taste
Red chili powder 1 tbsp
Jeera powder 1/2 tsp
Coriander powder 1 tbsp
Garam masala 1/2 tsp
Chopped green chillies 2 nos.
4 tbsp Fresh Cream
1 tsp Kasuri methi
Fresh coriander as required
