Beef cheeks is an inexpensive and underutilized (unappreciated) cut of beef that turns out delicious, tender and unctuous from all the collagen in the meat.
Beef cheeks are a worked muscle so that means it’s a tougher “less tender” cut. The best approach is to use a moist cooking method, such as, stewing or braising at low heat and extended times so the collagen has time to soften and melt. The end result is a tender, moist and unctuous (lip smacking good.)
The Instant Pot speeds up the cooking process. This recipe can be used with a pot on the stovetop or in the oven. A slow cooker will work too.
