Balushahi Recipe | Badusha | Halwai Jaisi Balushahi | Makhanvada | Khurmi | Balushahi Recipe with Perfect Measurements

Ingredients:

For Sugar Syrup:
• Sugar – 500 gm
• Water – 250 ml
• Saffron – 8 to 10 threads (dissolved in water)
• Cardamom powder – 1 tsp
• Lemon juice – 5 to 7 drops

For Balushahi dough:
• All-purpose flour (Maida) – 2cup
• Water – 1/2 cup
• Clarified butter – 1/2 cup
• Baking powder – 1 tsp
• Salt – a pinch

Recipe:

1. In a kadai or large pan take sugar and water, switch on the flame and stir till the sugar dissolves. Keep stirring to avoid caramelization.
2. Add saffron water, cardamom powder for beautiful color and flavor. Add lemon juice to stop crystallization after cooling down.
3. Let it come to a boil and check the consistency as it should be thick and not runny. Turn off the flame and let it cool down.
4. In a bowl add all the dough ingredients and combine them with light hands. Do not knead just gather all to make a soft dough.
5. Divide and combine dough for 3-4 times to make layers. And to make further layers flatten the dough on surface with hands and cut in half.
6. Put one piece onto another and repeat the process for 4-5 times to make nice layers.
7. Cover and let it rest for 5-7 minutes. After that divide it in 4 parts. Take one portion and roll it on surface to make the edges smooth.
8. To shape Balushahi take a portion and roll it by pressing it gently in circular motions. Make smooth and lightly flat ball and make a hole in center. Similarly make all Balushahi.
9. Heat oil in a large kadai. Put a small piece of dough, when it comes up then only add Balushahi in oil. Do not add them in hot oil or they will break.
10. Once oil heats, it will start to come up. When they come up, increase the flame to medium and fry.
11. Flip them after it changes color to light brown. And cook from other side also.
12. Take them out and directly put in lightly warm sugar syrup for 1 minute on each side. Don’t keep them in syrup for long.
13. Allow them to cool down for half an hour as they are too delicate to handle.
14. Garnish with some pistachios or any dry fruits and enjoy.
